  • 1 tbsp butter
  • 1 non-sweet onion , chopped
  • 2 cans (14.5 oz each) beef consomme
  • 1 can (15 oz) garbanzo beans , drained and rinsed
  • 1 can (14.5 oz) organic beef broth
  • 1 can (14.5 oz) organic chicken broth
  • 1 can (14.5 oz) diced tomatoes , undrained
  • 2 medium sweet potatoes , peeled and diced
  • 3 large carrots , chopped
  • 1 cup dried lentils , rinsed
  • ยฝ cup chopped dried apricots
  • 1 tbsp honey
  • Ground black pepper , to taste
