Ingredients
  

  • 2 cups of uncooked jasmine rice
  • 1 tablespoon of olive oil
  • 3 cloves of minced garlic
  • 3 green onions , chopped
  • 3 sprigs of fresh thyme leaves
  • 1 can (28 ounces) of kidney beans , drained
  • 2 cups of chicken stock
  • 1 can (14 ounces) of coconut milk
  • 1 Scotch bonnet pepper , stemmed
  • 1 tablespoon of salt
  • 1 teaspoon of brown sugar
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of red pepper flakes
  • ½ teaspoon of ground allspice
  • ½ teaspoon of cayenne pepper

Instructions
 

  • Rinse the rice using a fine strainer.
  • In a large 5-quart saucepan, heat the oil over medium heat.
  • Add the garlic, green onions, and thyme to the saucepan and cook until wilted, approximately 2 minutes.
