  • 12 ounces of premium dark chocolate , finely chopped
  • 16 ounces of canned chestnuts , drained
  • 6 tablespoons of softened butter
  • ½ cup of granulated sugar
  • ¼ cup of brandy
  • 1 teaspoon of vanilla extract
  • 12 ounces of premium white chocolate , finely chopped (divided)
  • A small amount of powdered red food coloring , for a dash of color


  • Place the dark chocolate in the top part of a double boiler over simmering water and allow it to melt. Turn off the heat and let the chocolate cool.
  • Add the chestnuts to a food processor and process until smooth puree, approximately 1 minute.
  • In a separate bowl, beat the butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Stir in the chestnuts, brandy, and vanilla extract until smooth.
