  • 1 tbsp vegetable oil
  • 1 ½ lbs lean ground sirloin
  • 1 onion , diced
  • 3 stalks celery , diced
  • 4 cloves garlic , minced
  • 2 cans (15 oz each) chili beans , undrained
  • 1 can (29 oz) pinto beans , rinsed and drained
  • 1 can (29 oz) tomato sauce
  • 2 cans (4 oz each) diced green chiles , undrained
  • 2 tbsp chili powder
  • 1 tbsp cider vinegar
  • 1 tbsp chile-garlic sauce (such as Huy Fong Foods®) , or to taste
  • 1 tsp dried oregano
  • ¼ tsp ground cumin


  • Turn on a multi-cooker (like Instant Pot) and choose the Saute function. Apply a layer of oil to the bottom of the pot.
  • Cook the beef until it turns brown, which should take approximately 5 minutes.
  • Add the onion, celery, and garlic. Cook and stir occasionally until the onion becomes translucent, which should take around 5 minutes.
  • Turn off the heat. Add the chili beans, pinto beans, tomato sauce, green chiles, chili powder, cider vinegar, chile-garlic sauce, oregano, and cumin. Mix everything well together.
  • Close and lock the lid of the multi-cooker. Set the pressure to high according to the manufacturer's instructions, and set the timer for 10 minutes. Give it 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to release the pressure naturally, which could take anywhere between 10 to 40 minutes.
