Ingredients
  

  • 7 small baking potatoes , peeled and cut into slices
  • 1 pound of ground beef
  • 1 package (16 ounces) of frozen mixed vegetables , thawed
  • 1 can (10.75 ounces) of condensed cream of mushroom soup
  • 1 cup of shredded Cheddar cheese
  • Salt and pepper , to taste

Instructions
 

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the mixed vegetables and mushroom soup. Mix well and set aside.
  • Place the potatoes in a large saucepan and cover with enough water. Bring to a boil, then reduce heat to medium and simmer until tender (about 5 minutes). Drain and set aside.
  • In a large skillet over medium-high heat, crumble the ground beef and cook until evenly browned, breaking up any large lumps. Drain excess grease from the beef and transfer it to a 9x13 inch baking dish.
  • Pour the vegetable mixture over the beef in the baking dish, then arrange the potato slices on top. Season with salt and pepper. Sprinkle cheese over the entire dish.
  • Bake the uncovered dish in the preheated oven for 25 minutes, or until the cheese is melted and the dish is heated through and bubbly.
