  • 1 stalk of celery , sliced
  • 3 long strips of lemon zest
  • 4 bone-in chicken breast halves , with the skin removed (2 1/2 to 3 pounds)
  • 4 cups of low-sodium chicken broth , either canned or homemade
  • 1 bunch of medium asparagus , with the thick ends trimmed and cut into 1-inch segments
  • 1/3 cup of fresh or frozen peas
  • 5 medium shiitake mushrooms , stemmed and sliced
