  • 3 ounces of pancetta , diced into 1/2-inch pieces
  • 2 cups of yellow onion , chopped (approximately 2 onions)
  • 1 1/2 cups of celery , chopped (approximately 2 large stalks)
  • 1 Granny Smith apple , peeled and chopped
  • 1/2 cup of medium or dry sherry
  • 2 tablespoons of minced fresh rosemary leaves
  • Kosher salt and freshly ground black pepper
