Method
Preheat the oven to 400 degrees F.
Place a half-cut apple on a cutting board, cut-side down. Carefully make thin vertical slices, avoiding slicing all the way through. Repeat with the remaining apple halves.
Transfer the sliced apples to a 9-by-13-inch baking dish.
In a small saucepot, melt 2 tablespoons of butter. Whisk in 2 tablespoons of brown sugar until fully mixed. Pour the butter and sugar mixture over the apples.
Bake for 18 to 20 minutes, or until the apples have softened.
In the meantime, prepare the streusel topping. In a small bowl, combine oats, flour, cinnamon, salt, remaining 2 tablespoons of butter, and remaining 3 tablespoons of brown sugar. Use a fork or your hands to mix the ingredients until they form a crumbly mixture.
After the apples have softened, remove the baking dish from the oven. Top each apple with the streusel mixture, ensuring some of it goes between the apple slices.
Return the dish to the oven and bake for another 10 to 15 minutes, or until the streusel topping turns golden brown.
Serve the baked apples with a scoop of ice cream.
