Heat oil in a large skillet over medium heat.
Add onions, celery, and carrots to the skillet and sauté until they become soft and start to brown, which should take around 10 minutes.
After that, add garlic and coriander to the skillet and fry for an additional 2 minutes.
Transfer the mixture from the skillet to the bottom of a slow cooker.
Add the vegetable mixture, hot water, diced tomatoes with juice, and bay leaf to the slow cooker.
Set the slow cooker to High and cook until the lentils become tender, which may take around 2 or more hours.
Once the lentils are tender, add the bouillon cube, salt, and pepper to the slow cooker. Stir well.
Cover the slow cooker and let it cook for another 20 minutes.
Lastly, remove the bay leaf from the slow cooker and serve the dish.
Note: If you are using red lentils, like my mother did, the result will be amazing. Additionally, remember not to add the salt until step 8. Adding salt too early can make the lentils tough.
