  • 1 cup chopped yellow onion
  • 2 garlic cloves , minced
  • ยฝ tsp grated fresh ginger
  • ยฝ tsp cumin
  • ยผ tsp coriander
  • ยผ tsp turmeric
  • ยผ tsp cardamom
  • 1 tsp sea salt
  • 2 cups cubed butternut squash
  • 3 red Thai chiles , chopped
  • 2 cups cauliflower florets
  • 1 can full-fat coconut milk
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh lime juice
  • 4 cups fresh spinach
  • ยฝ cup fresh or frozen peas
  • Freshly ground black pepper , to taste
  • 2 cups cooked basmati rice
  • A few big handfuls of fresh basil or cilantro
  • Naan bread
