  • 1 tbsp of olive oil
  • 1 lb of boneless , skinless chicken thighs (approximately 3 or 4 pieces)
  • A pinch of kosher salt and freshly ground black pepper
  • 6 cloves of garlic , peeled and crushed
  • 6 cups of chicken stock
  • 1 head of escarole (around 1 lb) , with wilted spots trimmed

Instructions
 

  • Heat the oil in a small Dutch oven or large soup pot over medium-high heat.
  • Sprinkle salt and pepper on both sides of the chicken thighs.
  • Place the chicken thighs in the pot, with the fattier side down, and cook until browned on the bottom and some fat has rendered out (approximately 4 minutes).
