  • 2 tablespoons of curry powder (preferably Chief or Lalah’s)
  • 2 teaspoons of ground coriander
  • 1 medium-sized onion (, finely chopped)
  • 2 garlic cloves (, thinly sliced)
  • 1 piece of ginger (, peeled and finely grated (about 2 inches long))
  • 1 habanero chile (, Fresno chile, or jalapeño, finely chopped)
  • 1 can (13.5 ounces) of full-fat unsweetened coconut milk (preferably Native Forest)
  • 1 ½ cups of low-sodium vegetable broth
  • 1 tablespoon plus 1 ½ teaspoons of honey
