  • 6 boneless , skinless chicken breast halves
  • cup sultana raisins
  • 1 large mango (about 1 pound) , peeled and thinly sliced
  • cup mayonnaise
  • 1 teaspoon mild curry powder
  • 1 tablespoon mango chutney
  • 1 teaspoon fresh lemon juice
  • A pinch of salt and ground black pepper
  • ¾ cup toasted cashews (optional)
