  • 3 tablespoons of light corn syrup
  • 12 ounces of salted butter (3 sticks) , cut into chunks
  • 1/4 cup of cocoa powder , preferably Droste or Valrhona
  • 1 cup of whole blanched almonds , preferably Marcona, toasted and roughly chopped
  • Equipment: Silicone baking mat
  • Candy thermometer

Instructions

  • Prepare a sheet pan by lining it with a silicone baking mat or greasing it with vegetable oil.
