  • 1/2 cup of strong coffee
  • 1/3 cup of packed brown sugar
  • 1/4 cup of cider vinegar
  • 1/4 cup of freshly squeezed lemon juice
  • 1 1/2 teaspoons of Dijon mustard
  • 2 teaspoons of kosher salt
  • 4 ancho chiles (, seeded and stems removed)
  • 4 Mexican dried chiles (, seeded and stems removed)
  • 3 cups of chicken stock
  • 1/2 of a white onion (, diced)
