Ingredients
  

  • 3 and a half cups of penne pasta
  • 1 tablespoon of olive oil
  • 4 boneless chicken breasts , cut into 1/2 inch cubes
  • 1 red bell pepper , chopped
  • 1 chorizo sausage , cut into chunks
  • 1 and a half cups of tomato puree
  • 1 cup of light cream
  • Optional: half a teaspoon of red pepper flakes
  • Half a cup of shredded Cheddar cheese
  • Half a cup of shredded mozzarella cheese
  • Quarter cup of freshly grated Parmesan cheese

Instructions
 

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large pot, bring lightly salted water to a boil.
  • Add the pasta to the boiling water and cook for 8 to 10 minutes, or until it is al dente.
  • Drain the cooked pasta and set it aside.
