Why Sweet Potato?

What sets Chef John’s Sweet Potato Biscuits apart from traditional biscuits is the addition of sweet potatoes. Just like a superhero with a secret power, sweet potatoes bring a unique flavor and texture to the biscuits. They add a touch of sweetness and moisture, resulting in biscuits that are tender and incredibly delicious.

Fluffy and Light

Imagine sinking your teeth into a biscuit that is light as a cloud, with a delicate crumb that practically melts in your mouth. That’s exactly what you can expect from Chef John’s Sweet Potato Biscuits. The combination of the sweet potatoes and the right amount of leavening agents ensures that these biscuits rise to perfection, creating a fluffy and light texture that will leave you craving for more.

The Perfect Balance

When it comes to biscuits, finding the right balance is key. Too dry, and they become crumbly and lackluster. Too moist, and they lose their shape and become dense. Chef John has mastered the art of achieving the perfect balance in his Sweet Potato Biscuits. The sweet potatoes provide just the right amount of moisture, while the addition of flour and other ingredients ensures a biscuit that holds its shape and is a delight to bite into.

A Versatile Delight

Chef John’s Sweet Potato Biscuits can be enjoyed in various ways. They make a fantastic accompaniment to a hearty bowl of soup or stew. Slather them with butter and jam for a delightful breakfast treat. Or pair them with your favorite savory fillings to create mouthwatering sandwiches. Ingredients

  • Ingredients:
  • 1 large sweet potato with orange flesh , peeled
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • ½ cup buttermilk
  • 3 ¼ cups self-rising flour
  • 1 ½ sticks unsalted butter , frozen
  • 1 tablespoon melted butter
  • 4 tablespoons butter , at room temperature
  • 1 teaspoon pomegranate molasses
  • 1 teaspoon pomegranate juice
  • Fresh pomegranate seeds for garnish

Instructions

  • Start by cutting the sweet potato in half lengthwise, and then cut each half in half again lengthwise, followed by cutting them in half cross-wise. This will result in about 16 evenly sized chunks.
  • Transfer the sweet potato chunks into a pot and cover them with water. Add salt to the pot.
  • Bring the pot to a simmer over high heat, then reduce the heat to medium-low. Cook the potatoes until they are tender, which should take around 17 minutes.
  • Once the potatoes are cooked, drain them thoroughly and return them to the pot. Mash the potatoes until you have 1 1/2 cups of mashed sweet potatoes. Allow them to cool completely.
  • Transfer the cooled mashed potatoes to a mixing bowl. Add brown sugar and buttermilk to the bowl, and mix them together until well combined.
  • In a separate mixing bowl, place the self-rising flour. Grate frozen butter into the flour, tossing with a fork to coat the butter with flour after each addition of about 1/3 to 1/2 stick. This will prevent the butter from clumping. The mixture should have floury pieces of butter.
  • Add the sweet potato mixture to the flour and butter mixture. Toss everything together with a fork until evenly distributed, but be careful not to overmix.
  • Transfer the mixture onto a lightly floured work surface. Push and press the mixture together into a rectangular shape
