  • 3 lbs of Yukon Gold potatoes , not wider than a muffin tin cup
  • 1/3 cup of melted butter , divided (add more if needed)
  • 1 tbsp of minced fresh rosemary
  • 2 tsp of kosher salt
  • 3/4 tsp of freshly ground black pepper
  • 1 pinch of cayenne pepper
  • 3/4 cup of grated Parmigiano-Reggiano cheese

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Grease a 12-cup muffin tin generously with melted butter, setting aside some for the potatoes.
