Servings 12

  • 3 lbs of Yukon Gold potatoes , not wider than a muffin tin cup
  • 1/3 cup of melted butter , divided (add more if needed)
  • 1 tbsp of minced fresh rosemary
  • 2 tsp of kosher salt
  • 3/4 tsp of freshly ground black pepper
  • 1 pinch of cayenne pepper
  • 3/4 cup of grated Parmigiano-Reggiano cheese

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Grease a 12-cup muffin tin generously with melted butter, setting aside some for the potatoes.
  • Use a mandoline or vegetable slicer to slice the potatoes into thin slices, about 1/16 to 1/8 inch thick. Discard any end pieces that are mostly skin.
  • In a bowl, combine the potato slices with rosemary, salt, black pepper, and cayenne pepper. Drizzle in the remaining melted butter. Mix well with your hands for about 2 to 3 minutes, ensuring that the seasoning is evenly distributed and separating the potato slices.
  • Grate about a quarter of the cheese over the potatoes and toss. Add more cheese and toss again. Repeat this process until all the cheese is incorporated.
  • In the prepared muffin tin, stack the potato slices in uneven layers to resemble flower petals, ending with some of the smaller pieces.
  • Bake in the preheated oven for 45 to 60 minutes, or until the potatoes are tender. Test with a metal skewer for doneness - the potatoes should be very soft. If the potatoes appear too brown but are not fully cooked, cover the pan with foil for the remaining baking time.
  • Use a fork to loosen the edges of the potato roses, then carefully remove them from the pan and transfer to a serving dish.
