  • 1 cup of granulated sugar
  • 1 cup of water
  • 2 tablespoons of light corn syrup
  1. Place two pots of water, each containing 1 quart of water, on high heat and bring to a boil.
  2. Use a peeler to peel the fruit in long, broad strokes from one end to the other. Be careful not to dig into the pith, but don’t worry if you accidentally do.
  3. If desired, chop the zest into thin strips.
  4. Prepare an ice bath by filling a large bowl three quarters of the way with ice cubes and cold water. Place the bowl near the stove, along with a slotted spoon, spider, or small strainer.
  5. Once the water in Pot #1 is boiling, add the zest and let it simmer for 20 seconds. Remove the zest from the water using a spider or by pouring it through a strainer into the sink. Rinse Pot #1 and refill it with another quart of water, then bring it back to a boil.
  6. Plunge the blanched zest into the ice bath, keeping the strands inside the strainer to avoid having to pick them out of the ice.
  7. Repeat steps 5 and 6 using Pot #2, and then repeat again using the newly boiled water in Pot #1. After the third round of blanching, no longer use Pot #1.
