Ingredients

  • 2 tablespoons of extra-virgin olive oil
  • 2 carrots
  • 1 medium yellow onion
  • 1 celery rib
  • 2 tablespoons of white wine vinegar
  • 2 cans (14.5-ounce each) of fire roasted diced tomatoes
  • 4 cups of vegetable broth
  • 1 can (15.5-ounce) of cooked white beans , drained and rinsed
  • 4 garlic cloves
  • 2 Yukon gold potatoes
  • 1 small green cabbage
  • 1 teaspoon of dried thyme
  • ยพ teaspoon of sea salt
  • Freshly ground black pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  • Heat the oil in a large pot over medium heat.
  • Add the carrots, onion, celery, salt, and freshly ground pepper. Stir occasionally and cook for 8 minutes.
  • Stir in the vinegar.
  • Add the tomatoes, broth, beans, garlic, potatoes, cabbage, and thyme.
  • Cover the pot and let it simmer for 20 to 30 minutes, or until the potatoes and cabbage are tender.
  • Taste and season the dish according to your preference.
  • Garnish with fresh parsley.
  • Serve and enjoy!
