Ingredientsย ย
- 2 tablespoons of extra-virgin olive oil
- 2 carrots
- 1 medium yellow onion
- 1 celery rib
- 2 tablespoons of white wine vinegar
- 2 cans (14.5-ounce each) of fire roasted diced tomatoes
- 4 cups of vegetable broth
- 1 can (15.5-ounce) of cooked white beans , drained and rinsed
- 4 garlic cloves
- 2 Yukon gold potatoes
- 1 small green cabbage
- 1 teaspoon of dried thyme
- ยพ teaspoon of sea salt
- Freshly ground black pepper (to taste)
- Fresh parsley (for garnish)
Instructionsย
- Heat the oil in a large pot over medium heat.
- Add the carrots, onion, celery, salt, and freshly ground pepper. Stir occasionally and cook for 8 minutes.
- Stir in the vinegar.
- Add the tomatoes, broth, beans, garlic, potatoes, cabbage, and thyme.
- Cover the pot and let it simmer for 20 to 30 minutes, or until the potatoes and cabbage are tender.
- Taste and season the dish according to your preference.
- Garnish with fresh parsley.
- Serve and enjoy!
