  • 2 medium leeks (, trimmed, cleaned, and halved OR 1 small yellow onion, peeled, trimmed, and halved)
  • 1 medium carrot (, peeled and cut into 3 pieces)
  • 8 cups of water
  • 2 tablespoons of fish sauce suitable for the Paleo diet
  • 1 teaspoon of apple cider vinegar
  • 1/4 oz of dried shiitake mushrooms
  • 4 cloves of garlic (, peeled and crushed (optional))
  • 1 piece of fresh ginger (, about 1 inch long, peeled and cut into thick slices)
  • Kosher salt or Celtic sea salt
