Ingredients
  

  • 1 (8 lb) pork shoulder roast
  • 1 quart of apple cider , or enough to cover the roast
  • 5 tbsp white sugar
  • 5 tbsp light brown sugar
  • 2 tbsp kosher salt
  • 2 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp freshly ground black pepper
  • 1 tbsp garlic powder
  • 3 cups of hickory chips , or more if needed, soaked in water
  • 1 chopped onion

Instructions
 

  • In a large pot, place the pork shoulder and pour enough apple cider to cover it.
  • In a bowl, combine white sugar, brown sugar, salt, paprika, onion powder, black pepper, and garlic powder.
  • Take 1/4 cup of the sugar rub mixture and mix it into the cider. Set aside the remaining rub.
  • Cover the pot and refrigerate it for 12 hours.
  • Preheat the smoker to 210 degrees F (99 degrees C) and add wood chips to it.
  • Pour the cider brine into the water pan of the smoker and add the onion and 1/4 cup more of the sugar rub.
  • Spread the remaining sugar rub over the pork shoulder.
