The Art of Gumbo Making

Gumbo is more than just a dish; it’s an art form. Just like a painter skillfully combines colors on a canvas, Big Charlie carefully blends various ingredients to create a symphony of flavors. From the rich roux to the hearty ingredients, every element plays a crucial role in achieving the perfect balance.

Picture this: imagine the aroma of simmering onions, bell peppers, and celery filling your kitchen, while the roux thickens and darkens, releasing its deep, nutty fragrance. It’s a sensory experience unlike any other.

The Secret Ingredient: Roux

Roux is the backbone of any great gumbo. It’s a mixture of flour and fat, cooked to a golden brown perfection. This magical concoction adds depth, richness, and a velvety texture to the gumbo. It’s the secret behind Big Charlie’s Gumbo’s irresistible flavor.

Just like a sturdy foundation supports a magnificent building, the roux forms the base of the gumbo, holding all the flavors together. It is a testament to the patience and skill required in creating a truly remarkable dish.

The Dance of Flavors

Big Charlie’s Gumbo is a medley of flavors that dance on your taste buds, leaving you wanting more. The marriage of smoky andouille sausage, succulent shrimp, tender chicken, and delicate okra creates a symphony of flavors that will transport you straight to the heart of Louisiana.

Think of it as a well-orchestrated symphony, where each instrument plays a unique role. The andouille sausage adds a smoky note, the shrimp brings a touch of sweetness, the chicken provides richness, and the okra imparts a delightful sliminess that thickens the gumbo to perfection.

  1. In a large skillet, melt butter over medium heat.
  2. Cook garlic, onions, celery, and okra in the skillet, stirring constantly until golden brown. Set aside.
  3. In a large stock pot over medium-high heat, combine 1/4 cup butter and flour. Stir constantly until the roux turns chocolate brown.
  4. Stir in the vegetable mixture and stew meat. Cook, stirring, until vegetables are tender and meat is evenly browned.
  5. Add water, tomatoes, and sugar to the pot. Season with parsley, thyme, bay leaves, salt, cayenne pepper, and black pepper. Bring to a boil, then reduce heat and simmer for 2 1/2 hours, stirring occasionally.
  6. Stir in shrimp, crabmeat, and andouille. Add hot pepper sauce and Worcestershire sauce. Squeeze lemon juice into the pot, removing any seeds. Simmer for an additional 10 minutes, stirring occasionally.
  7. Remove bay leaves from the gumbo. Sprinkle with filé powder.
  8. Serve the gumbo over rice.
  9. Note: Filé powder should be added off the heat to thicken the gumbo. Adding it while the gumbo is still cooking may result in a stringy and unpleasant texture. Filé powder, made from ground sassafras leaves, can be found in many supermarkets.
