  • 2 cups of granulated sugar
  • 1 cup of water
  • 3 bags of frozen peaches (16 ounces each) , defrosted
  • 1 teaspoon of freshly grated orange zest
  • 4 to 6 bottles (750 milliliters each) of chilled Prosecco or other sparkling wine
  • Orange peel twists , for garnish


  • In a large saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves. This should take approximately 5 minutes. Let the mixture cool completely.
  • Using a blender, puree the peaches and orange peel along with 1 1/2 cups of the sugar syrup until a smooth consistency is achieved.
  • Strain the puree through a fine-meshed strainer into a bowl to remove any solids.
  • Transfer the puree into a pitcher or clear glass bowl.
  • For each serving, pour 2 to 4 tablespoons of the peach puree into a Champagne flute.
  • Slowly pour enough Prosecco into the flute to fill it.
