This recipe for Beef Birria is inspired by a delicious beef stew recipe I learned while working at a Mexican restaurant during college, as well as the amazing goat birrias I've enjoyed in San Francisco's Mission District. It's one of my all-time favorite stews, and I don't need any particular reason to make a batch. However, this stew was just the first step towards making some incredible tacos with the leftover meat in a follow-up video.
To make the stew:
Cut the beef chuck in half and then into 3-4 inch pieces. Cut each beef short rib in half, down to the bone.
Place the beef chuck and short ribs in a soup pot and season with kosher salt, oregano, black pepper, cumin, cinnamon, and cloves. Mix well to coat the meat evenly. Cover and refrigerate for at least 6 hours or overnight.
Prepare the guajillo chiles by removing the stems and seeds. Open the chiles and discard the seeds.
Heat olive oil in a saucepan over medium heat. Add the guajillo chiles and cook for about 30 seconds. Add onion, garlic, and ginger, and cook until combined. Add tomatoes and water, bring to a boil, then reduce heat and simmer for 30 minutes.
Turn off the heat and use an immersion blender or countertop blender to puree the mixture until smooth.
