Ingredients

  • 20 lasagna noodles
  • Cooking oil spray
  • 1 quart of barbecue sauce
  • 4 quarts of a blend of shredded sharp Cheddar and Monterey Jack cheese
  • 2 pounds of pulled pork
  • 2 pounds of smoked chicken , diced
  • 2 pounds of Cajun sausage , cooked and diced

Instructions

  • Preheat the oven to 400 degrees F.
  • In a pot of salted water, boil the lasagna noodles for 9 minutes.
  • Once cooked, drain the noodles and transfer them to an ice bath for 1 minute.
  • Lay out the noodles on a large cookie sheet and apply cooking spray.
  • In a 4-inch-deep full-size hotel pan, evenly spread a layer of barbecue sauce on the bottom.
  • Arrange 5 slightly overlapping noodles to completely cover the bottom of the dish.
  • Spread a layer of pulled pork over the noodles.
  • Pour 5 ounces of barbecue sauce and 1 quart of cheese over the pulled pork.
  • Repeat the layering process with 5 more noodles, smoked chicken, 5 ounces of barbecue sauce, and 1 quart of cheese.
  • Create another layer with 5 more noodles, Cajun sausage, 5 ounces of barbecue sauce, and 1 quart of cheese.
  • Finish by placing the remaining noodles on top, followed by the rest of the barbecue sauce and the last quart of cheese.
  • Bake the dish, uncovered, for approximately 30 minutes or until cooked through.
