  • 8 slices of thick-cut bacon , sliced in half
  • 8 firm and ripe fresh figs , sliced lengthwise
  • 6 ounces (170g) of creamy blue cheese , crumbled (refer to notes)
  • 1/2 cup (120ml) of bourbon
  • 3/4 cup (6 ounces; 170g) of unsalted butter
  • 3/4 cup (6 ounces; 170g) of lightly packed light brown sugar
  • Flaky salt , such as Maldon (optional), for sprinkling


  • Preheat the broiler and position the oven rack on the top level.
  • Cover a rimmed baking sheet with aluminum foil.
  • In a large skillet over medium heat, cook the bacon until most of the fat has melted but the bacon is still flexible. Place the cooked bacon on a plate lined with paper towels to soak up excess grease. Set it aside.
  • Using a melon baller or a small spoon, scoop out the center of each halved fig. Stuff each hollowed fig half with blue cheese.
