  • 1 pound pinto beans (, dried)
  • 1 pound ground beef (, 90% lean)
  • 2 sweet onions (, large, diced)
  • 3 cups celery (, diced)
  • 3 carrots (, peeled and diced)
  • 6 cloves garlic (, minced)
  • 2 red bell peppers (, diced)
  • 4 jalapeno peppers (, seeded and minced)
  • 2 Anaheim peppers (, seeded and diced)
  • 2 poblano peppers (, seeded and diced)
  • 1 quart tomatoes (, diced)
  • 2 tablespoons guajillo chile powder
  • 1 ½ tablespoons cumin (, ground)
  • 1 teaspoon oregano (, dried)
  • 1 teaspoon coriander (, ground)
  • ¼ teaspoon cinnamon (, ground)
  • 2 tablespoons hot sauce
  • 1 tablespoon beef bouillon granules
  • Water (, as needed)
  • 2 teaspoons masa harina flour (Mexican corn masa mix) (, optional)
  • 2 teaspoons salt
  1. Place pinto beans in a large container and cover with cool water. Let them soak for 8 hours to overnight.
  2. In a large stockpot, cook and crumble the beef over medium-high heat until it is evenly browned and no longer pink, approximately 7 to 10 minutes. Remove and discard any excess grease.
  3. Drain the soaked pinto beans and add them to the stockpot. Also, add onions, celery, carrots, garlic, red bell peppers, jalapeno peppers, Anaheim peppers, poblano peppers, diced tomatoes, guajillo chile powder, cumin, oregano, coriander, cinnamon, and hot pepper sauce. Reduce the heat to medium-low and let the mixture simmer for about 3 hours.
  4. Stir in the beef granules and continue simmering until the beans are very tender and easily disintegrate, which may take an additional 1 to 3 hours. Add water as needed to ensure the beans and vegetables are immersed in liquid. If you prefer a thicker texture, you can thicken the chili with masa harina. Season with salt just before serving.
  5. If using a crock pot, set it to high heat and cook the chili uncovered for 8 to 10 hours. In the final hour, you can optionally add beef base for extra flavor. While it is not necessary, it is commonly used.
