  • 15 egg yolks
  • ½ cup of port wine

  • In a small saucepan, heat 1 cup of sugar and 1/2 cup of water over high heat without stirring.
  • Reduce the heat to low once the sugar reaches an amber color, being careful not to burn it.
  • Carefully add 1 tablespoon of water, stir, and remove from heat.
  • Pour the caramel into a lidded pudding pan, ensuring the entire inside is coated.
  • In a separate saucepan, bring 2 cups of water to a boil over high heat.
  • Add 2 cups of sugar, bacon, cinnamon, and lemon peels to the boiling water.
  • Attach a candy thermometer to the side of the pan and slowly heat the syrup to 217 degrees F (103 degrees C), or until a small amount of syrup dropped in cold water forms a thin thread.
