Instructions
Preheat the oven to 425 degrees F (220 degrees C).
Prepare a baking sheet by lining it with parchment paper.
Arrange the eggplant slices in a single layer on the prepared baking sheet.

Sprinkle garlic powder, smoked paprika, and Italian seasoning evenly over the eggplant slices.
Place the baking sheet in the preheated oven.
Roast the eggplant slices until they turn golden and crispy, which usually takes about 25 minutes.
Once roasted, sprinkle some salt over the eggplant slices.
