of crumbled Mexican chorizo

medium-sized onion
, chopped

large potatoes
, peeled and diced into small cubes
¼ cup of water

clove
of crushed garlic

flour tortillas
, warmed
Instructions
In a large skillet over medium heat, mix together chorizo and onion. Cook and stir until the onion is softened, which should take around 5 minutes.
Add potatoes, water, and garlic to the skillet. Stir everything together thoroughly.
Cover the skillet and reduce the heat to medium-low. Cook for about 25 minutes, stirring every 10 minutes, until the potatoes are tender.
Once the potatoes are cooked, remove the skillet from the heat.
Spoon the mixture into warm tortillas and serve.
