- 1/4 cup of rice vinegar
- 2 tablespoons of tamari
- 1/2 teaspoon of toasted sesame oil
- 1 teaspoon of grated ginger
- 1 garlic clove
- 1/2 teaspoon of maple syrup or honey
- 6 ounces of soba noodles*
- Sesame oil
- 2 avocados
- Squeezes of lemon
- 2 cups of blanched snap peas
- 1/4 cup of edamame
- 1 watermelon radish or 2 red radishes
- 1/4 cup of fresh mint leaves
- Sesame seeds
Instructionsย
- Prepare the dressing: Combine vinegar, tamari, sesame oil, ginger, garlic, and honey in a small bowl. Set aside.
- Boil unsalted water in a pot and cook the soba noodles according to the instructions on the package.
- After cooking, drain the noodles and rinse them thoroughly with cold water to remove excess starch.
- In a separate bowl, toss the noodles with the prepared dressing.
- Divide the dressed noodles into 2 to 4 bowls.
- Squeeze fresh lemon juice onto avocado slices and add them to the bowls.
- Add snap peas, edamame, radish, and mint to the bowls.
- Sprinkle sesame seeds over the bowls.
- If desired, drizzle more tamari or sesame oil over the bowls.
