Ingredients

  • 1/4 cup of rice vinegar
  • 2 tablespoons of tamari
  • 1/2 teaspoon of toasted sesame oil
  • 1 teaspoon of grated ginger
  • 1 garlic clove
  • 1/2 teaspoon of maple syrup or honey
  • 6 ounces of soba noodles*
  • Sesame oil
  • 2 avocados
  • Squeezes of lemon
  • 2 cups of blanched snap peas
  • 1/4 cup of edamame
  • 1 watermelon radish or 2 red radishes
  • 1/4 cup of fresh mint leaves
  • Sesame seeds

Instructions

  • Prepare the dressing: Combine vinegar, tamari, sesame oil, ginger, garlic, and honey in a small bowl. Set aside.
  • Boil unsalted water in a pot and cook the soba noodles according to the instructions on the package.
  • After cooking, drain the noodles and rinse them thoroughly with cold water to remove excess starch.
  • In a separate bowl, toss the noodles with the prepared dressing.
  • Divide the dressed noodles into 2 to 4 bowls.
  • Squeeze fresh lemon juice onto avocado slices and add them to the bowls.
  • Add snap peas, edamame, radish, and mint to the bowls.
  • Sprinkle sesame seeds over the bowls.
  • If desired, drizzle more tamari or sesame oil over the bowls.
