Ingredientsย ย
- 1/4 cup of extra-virgin olive oil
- 1 1/2 tablespoons of lemon juice
- 1 tablespoon of red wine vinegar
- 1/2 of a shallot
- 1 garlic clove
- 1 tablespoon of dried oregano
- 1/2 teaspoon of sea salt
- Freshly ground black pepper (to taste)
- 1 small head of iceberg lettuce
- 1 head of radicchio
- 1/2 of a small red onion
- 1 pint of cherry tomatoes
- 1 can of chickpeas
- 4 ounces of fresh pearl mozzarella
- 4 ounces of provolone cheese
- 5 pepperoncini
- 1 teaspoon of oregano
- Sea salt and freshly ground black pepper (to taste)
Instructionsย
- Prepare the dressing by whisking together olive oil, lemon juice, vinegar, shallot, garlic, oregano, salt, and pepper in a small bowl. Set aside.
- Halve the iceberg lettuce through the core, then remove the core. Slice the lettuce lengthwise into 1/4-inch strips. Repeat this process with the radicchio.
- In a large bowl, combine the lettuce, radicchio, tomatoes, chickpeas, mozzarella, provolone, and pepperoncini. Drizzle the dressing over the ingredients and gently toss to coat. Add salt and pepper to taste, then toss again. Sprinkle with additional oregano and serve.
